Savourites to take Bengali cuisine global

If you are a part of the large Bengali diaspora settled abroad, expect to get treated with bhapa ilish, daab chingri, mochar ghanto, zamindari bangle thali, lolita shukti from Dhaka and many more mouthwatering authentic Bengali delicacies at the next wedding bash or other party that you attend. Savourites, which owns restaurant chains such as 6, Ballygunge Place (for Bengali cuisine) and The Wall (for pan-Asian cuisine) is well set to launch its outdoor catering services globally, wherever there is a large concentration of Bengali or Southeast Asian population, starting with London and New York.

Savourites outoor catering service — to be christened as ‘6 Ballygunge Place Catering’ will also serve delicate Southeast Asian cuisine and will tap convention services, banquet management, executive lunches and so on, S Ramani, managing partner and director, Savourites, told Financial Chronicle. The company is also on the verge of putting up its first two overseas fine-dining restaurants in central London and Manhattan in New York, he said.

Significantly, ‘6, Ballygunge Place’, Kolkata’s first Bengali period dining brand, has recently got its trademark registered as an address. It is for the first time in India that a house address consisting of the premises number as well as the name of the street where it is located has been granted trade mark/ service mark registration.

“Our aim is to execute perfectly at convention services, banquet management, restaurants, executive lunches and parties of various kinds. We have already created a benchmark in the catering industry in India and we hope that the same will be replicated globally as well with our exquisite Bengali, Southeast Asian and world cuisine. We will surely attract and satisfy a sizeable cosmopolitan population serving Bengali cuisine in an international format to leave it basking in the memories of sorshe-ilish, doi-rui and lau-chingri,” said Ramani.

He said, “In the US alone, as many as 300 Bengali wedding parties take place each wedding season. If we manage to get 10-15 per cent of these high-end weddings, we are through.”

In India, the group runs three fine dining restaurants — one in Bangalore and two in Kolkata — offering Bengali cuisine and another offering pan Asian cuisine. The plan is to come up with at least 15 ‘6 Ballygunge Place’ outlets in the country within the next three years and roll out express format (quick dining) of ‘6 Ballygunge Place’ in tier-II cities such as Howrah, Siliguri, Asansol and so on.

“The first few new outlets will come up through our internal accruals. We are also looking at raising funds from PE or VC funds at an appropriate time, diluting up to 25 per cent of promoters’ stakes,” said Ramani.
